Baked on the Bright Side

The Gluten-Free Doctor, Dr. Wangen, Stops by Colorado

April 6, 2011

We are a little late getting up this post, but wanted to give a shout-out to Dr. Stephen Wangen.  We were lucky enough to get the chance to have breakfast with the doctor when he was in town last month to speak at a presentation organized by the Denver CSA Chapter.  It was a fun filled morning of chatting with  Dr. Wangen, catching up with our GF blogger friends, and thoroughly enjoying the gluten-free breakfast cooked up by Snooze AM Eatery in Denver. Their gluten-free pancakes were a hit across the table!

Dr. Wangen is a licensed and board certified physician specializing in digestive disorders and food allergies. He is the author of “Healthier Without Wheat: A New Understanding of Wheat Allergies, Celiac Disease, and Non-Celiac Gluten Intolerance”. He has first-hand experience with his area of expertise, having been diagnosed with IBS and later a gluten intolerance in 1996 as well as a dairy allergy.  We picked his brain on helpful tips for those living with celiac disease and those just beginning their  gluten-free journey.  Check out Dr. Wangen’s blog for great information and help for gluten-free living.

The morning was made complete by the other participants at the gluten-free meeting- Dee Valdez from Gluten Free Dee, Rich Schneider from Sandwich Petals, Jim from Happy Gluten Free, Erin from King Sooper’s, and Deby’s Gluten Free showed up with gluten-free muffins.
