Good Afternoon Gluten-free followers! I am on Day 4 of walking in your shoes, the Gluten-free way! This weekend I spent a LOT of time on blogs and online forums researching what is Gluten-Free and what is not. There are so many ingredients on a daily basis that one does not think about to check for gluten! For example mustard, I never would have thought that Dijon mustard would contain gluten. Not to worry I did find some Gluten-free mustard on my grocery shopping adventure (more on grocery shopping soon)! Personally I am an optimist and always try and find the bright side of situations so naturally during this month of Gluten-free eating I will be keeping the vibe supremely positive. One of the great things I have found about being Gluten-free so far is that you really have to slow down and examine what you are eating. I think one of the problems with American society is that we eat way to darn fast! SO congrats Celiac and Gluten-intolerant peeps, if you eat anything like the way I have eaten in the past few days (slowly examining every ingredient I consume) you are changing the American food habit culture! Woohoo! OK wow sorry, I digress…back to the Gluten-free World Wide Web. Hats off to all of you Gluten-free bloggers and internet advisors, I am not sure what I would do without your help! You all are constantly updating the Gluten-free world about new products and gluten-free ingredients; it is really inspiring to someone who is new to the Gluten-free world. With all of your help, this weekend I made the MOST delicious tempeh burger (even if it was sort of by mistake). I spent a lot of time in the kitchen with my laptop right by my side so I could look up every ingredient to make sure I was staying on the Gluten-free path. I was very proud of my colorful and delicious lunch! I will be sure to post my “Orangy-Delicious Gluten-free Tempeh Burger“ in the recipe section of our website, check it out and let me know what you think! While my stomach has been growling at me a lot these past 4 days and I find that so much more of my energy is being put into concentrating on eating only Gluten-free foods, I will say that my energy levels are up and my digestive system is moving great!
This week I am looking forward to testing out some more yummy recipes, also stay tuned for my next post which will be all about labels and grocery shopping!
